"Just as the Paissiau supports the vine, so we support the cause of quality wine"

THE BROTHERHOOD OF THE PAISSIAU was created in 1966 to honour those friends and clients that most merited it, or the personalities helping (or who could help) the vignerons to promote the wines of Menetou-Salon. The emblem of this brotherhood, the ‘paissiau', is the stake that supports the vine.

The Master of Ceremonies calls the applicant who is presented by a sponsor. The Chancellor, at the induction, demands the applicant to commit himself to the following:
  •   "Just as the Paissiau supports the vine, we support the cause of quality wine
  •   The knight of the order must promise never to cut quality wine with water
  •   The knight of the order must promise to spread the word about the virtues and the qualities of the wines of Menetou-Salon, and must hold it in particularly high esteem."


After the Grand Master has inducted a new member as an honourable knight, the toast is raised by the grand cupbearer who glorifies the Menetou-Salon in these terms:


May the virtues of this wine of a very ancient lineage, clear like a summer's day, frank like its golden colour, gay like birdsong, make your heart and spirit in its image.
The knights are robed in a red velvet cape, a black Berry hat, with a taste-vin on a suspended tricolour ribbon chain: green, white, red (the colours of Jacques Coeur) and carrying a long ribbon-covered paissiau.
